Hi! I'd like to start making sourdough but I'm unsure of what to do with the starter over all the upcoming 3 day YT. Does anyone have advice?

You started a new starter, from scratch? And YT will be during the establishing 2-week time period?
Or it's already a mature starter?a mature starter, keep it in the fridge.
I keep mine in the fridge all week long.

I actually haven't made starter yet, was planning on it this week. Would you recommend waiting until after chagim?

If you haven't started yet, I would postpone until after RH. An old, mature sourdough one can keep in the fridge with no problems. But young ones need regular feeding, stirring and discarding surplus. I don't think it's allowed on YT because it is not something you can eat that day. If you leave a young one untended outside for 3 days, it'll rot. If you put a young one in the fridge, it might die.

It's kind of worthless to start now. But if you start a day after rosh Hashanah maybe it'll be good for erev sukos. Otherwise rather wait until after sukos.

Do know anyone else who makes sourdough who can give you mature starter? Then you can start baking with it right away. I know I'm always happy to give starter to people, I end up having more than enough for myself anyway because I need to feed it regardless.

You still have a week before Yom Tov. When I made mine from scratch, I did it in one week. By wednesday, you can use it to make Challah and put the extra in the fridge to keep in between uses. Feed it before putting in the fridge, and when you want to use it again, take it out the night before.

Why dont you get starter from someone
Or yiu can buy dehydrated starter powder in the grocey
Mature starter make way better sourdough than fresh starter
