Take off the bag and put on top of the Cholent the same way I’d put any other meat in. Bonus is that it flavors the whole Cholent (when I’m using pastrami as my cholent meat I don’t add ANY spices)!
I use meat maven Cholent pastrami and my whole family loves it.

Then don’t use pastrami in the cholent. It’s a very distinct taste. You either like it or you don’t. If you don’t, don’t put it in the cholent pot. If some of your family likes it, serve separately.

I buy in a vacuum packed bag. It’s made for the cholent.
I put it into the cholent in the bag. It doesn’t give a flavor.
I don’t remember how I did this but I’ve cooked before Shabbos. Sliced. And put in pan with some water on a low temp in the oven and it was delicious Shabbos day. This is a good for a larger pastrami and you don’t want it to flavor the cholent.

Vacuum seal it in a cook safe bag if you don't want the taste to get out.
