Why can't I find a healthy diet muffin?

I buy muffins from juice by Julie at 80 calories a muffin. But for five dollars a muffin I can't afford it anymore. I have been looking for weeks for similar type recipes and can find nothing! They are large, not small. How can it be? Does anyone have any recommendations?

Have you considered that the claim of low calorie is false?

There have been a few "scandals" involving false claims of low calories.

Alternatively they could be using commercial products like sawdust or equivalent that bulk up the batter.

I really doubt they are 80 calories. I saw with my one eyes that they are ordered from a regular bakery in Brooklyn. I’m trying to remember which one. Not a “diet” bakery.

The bottom line is there is no such thing as a healthy muffin. Muffin is cake. My nutritionist told me if I really need it then I can have a mini one once in a while as a treat. But it really can't replace a proper breakfast or snack.

I don’t see how there can be a large muffin for only 80 calories. Are you sure the calorie content is for the entire muffin and not just half of it?
In general muffins are pretty calorie dense. Even the lower calorie ones.

You can bake grated vegetables (zucchini, carrots, potatoes), mixed with egg in a muffin mould and this will be a "healthy" "low calory" muffin.

It might also work with fruit and egg white.

It's doable.

Whether it has 80 calories or more is also a question of size.

If you make a regular muffin small enough, it might not exceed 80 calories.

Reminds me of an old seinfeld episode where they are selling fat free ice cream and everyone is putting in weight. Turns out theres plenty of fat in it.

Sponge cake batter has about 350 cal per 100g.
So if you fill your muffin with 15g batter (52 cal) and the rest with 25g fresh blueberries (12 cal), you should remain under 80 cal per muffin. Or 20g batter and 15g blueberries is quite exactly 80 cal.

I'm sorry OP, but the Jus by Julie muffins are a scam. I actually called to complain to them about it and asked them for a refund for all the muffins I've bought.
They buy them from Spring, and in Spring they are sold as regular muffins with around 300 calories. They might even have more.
If your diet isn't working, this is why.
You can call to complain but don't expect anything.
They actually told me they would reimburse me but never did. (I knew they wouldn't I just don't go for BS)

I love this recipe.

Using SparkRecipes calculator, these muffins have 165 calories with 7.5 grams fat, 20g carbs, 3g fiber, 9g sugar, and 6.5g protein each.


Ingredients

3/4 cup plain Greek yogurt

2 large eggs

1/3 cup creamy almond butter (I use peanut butter if I don't have almond butter)

1/3 cup honey

2 teaspoons pure vanilla extract

2 cups old-fashioned whole rolled oats

1/2 cup almond flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

3/4 cup + 2 Tablespoons fresh or frozen blueberries (do not thaw)

optional: handful of sliced, slivered, or chopped almonds for topping

Instructions

Mix all ingredients.
Fold in 3/4 cup blueberries, reserving the rest for the tops of the muffins.

Spoon the batter into liners, filling them all the way to the top. Top each with a couple blueberries and almonds. 

Bake the muffins for 5 minutes at 425°F then at 350°F for an additional 14-16 minutes or until a toothpick inserted in the center comes out clean.

The total time these muffins take in the oven is about 19-21 minutes, give or take.

Allow the muffins to cool for 10 minutes in the muffin pan.

Muffins stay soft, fresh, and moist in the refrigerator for up to 5 days.

Muffins freeze well for up to 3 months. Thaw overnight in the refrigerator before enjoying.

Muffins are never going to be healthy or diet. Even if low sugar and fat they are high carbs. Unless they are keto high protein no sugar, but then they're high fat and you need to make sure you're following a general high protein / fat ultra low carb keto type diet otherwise it will just not help.

To be honest best way to eat healthy is only to have baked goods as a treat now and then, and focus on real food, not try and replace the treats with less bad treats.

You could call it a muffin , but it's really a crustless quiche. Very Happy
