Oh you did want almond flour recipes, I read wrong, I thought initially that it said no almond flour.
Almond Biscotti
3 eggs
1/4 cup oil
3/4 cup sugar
4 cups almond flour
Cream eggs, oil, and sugar. Add almonds and mix until dough forms. You can add any add-ins now.
Make 2 logs, flattening down so they're 4" wide & 1/2" thick. Bake on parchment lined cookie sheet in oven preheated to 350 for 20 min.
Cool slightly and cut into 1/2" slices. Lay slices cut side down on cookie sheets and bake additional 10-15 min.
Feel free to dilute some coffee in a drop of boiling water and or add a drop of lemon to brighten flavors but really just fine as is.

I just made this delicious praline biscottis that were in the view last year but it doesn’t use almond flour
3 cups ground filberts
2 3/4 cup potato starch
1/2cup finely ground almonds
1 3/4 cup sugar
1 cup oil
4eggs
Topping
2 T chopped filberts
2 tsp sugar
1 tsp cinnamon
Preheat oven to 350
Toast filberts on cookie sheet for 10 min and let it cook
Transfer to bowl and mix with potato starch and ground almonds until combined. Add sugar and mix
In a separate bowl mix oil and eggs then add it to he dry ingredients
Form 3 loaves on cookie sheets
Mix topping ingredients and sprinkle onto the loaves
Bake for 40 to 45 minutes. Allow to cool, biscotti will break if sliced while warm
Once it has cooled slice it
Optional: for crispier biscotti lay slices flat on baking sheet and toast for 10 minutes on 250

Delicious Lemon Biscotti (almost tastes chometz, the key is to beat the eggs and oil for really long until fluffy)
2 eggs
2 egg yolks
3/4 C sugar
1/2 C oil
Beat on high for 5 minutes
Add the ingredients below and mix gently until just combined
1 cup almond flour
1 cup potato starch
3 T lemon juice (freshly squeezed)
Pour into 2 medium loaf pans lined with parchment
Bake on 350 for about 25 minutes until firm and easily separate from parchment
Once cool, slice it and retoast on 325, laying them out on a cookie sheet flat
You can make a simple lemon icing as well and drizzle on top, I don't have exact measurements but confection sugar, oil, lemon juice until it gets the right consistency

Think I can use double potato starch instead? Don't have almonds flour

I made this. Added some lemon juice. Looks really good thank you!
