I was at a simcha recently where they had the typical penne a la vodka that every caterer/bagel shop etc makes, delicious and I'm sure not low calorie, but my picky kids loved it and they asked me to make it like that. Any ideas? TIA!

Heat 1 jar Gefen vodka tomato sauce with 1 16 oz container heavy cream. Easy and delicious.

Thanks! I've done that before with marinara and heavy cream, it wasn't as good - is this that different?

Add actual vodka (1/4 cup) and let the alcohol cook out. Completely changes the taste for the better.

I did this for an event plus 3/4 jar parmesan cheese. Bring to a simmer. Add cooked pasta. There's was not a drop left over.

Ooh, sounds good. My kids don't generally like parmesan, did it taste like parmesan or it blended in?

Gefen vodka sauce, heavy cream, garlic cubes and additional spices.
Bake it for a few minutes or use a steno...I made it for a party last week and leaving it on the steno really changed the consistency
Was delicious!
I don't think most caterers use parmesan cheese. It's too expensive! I actually asked Circa in Lakewood cuz the sell their sauce and was told that there's no parmesan in the penne or Alfredo sauce

Tell you a little secret. I didn't eat it. I don't like dairy. None was left when I made it for an event. That's all I know. Not even one piece of pasta. It's not alot of parmesan and you melt it in before adding the pasta.

I melt butter, add in crushed garlic, tomato paste, some water from the pasta, heavy cream, salt.
Sprinkle parm cheese for a really authentic restaurant flavor.

Don't rinse the pasta after draining. It helps the sauce stick to it better.
Also, salt the water before cooking the pasta.

I put regular cheese like muenster, cheddar or mozzarella and it’s good. I do it to avoid the shaila of how many hours to wait after parmesan. You can also put garlic or garlic cubes.
