Potato-Crusted Salmon Fillets

A crusty topping of shredded hash browns turns ho-hum salmon fillets into an elegant dish. The potatoes become crispy, while keeping the salmon moist and tender. Serve with Sheet Pan Roasted Vegetables or a garden salad.
MAKES 4 SERVINGS
1 cup frozen shredded hash brown potatoes, thawed
⅓ cup mayonnaise
2 tablespoons horseradish, well drained
1 teaspoon freshly ground black pepper
1 teaspoon onion powder
¾ teaspoon kosher salt
4 6- to 7-ounce salmon fillets, skin removed
1 tablespoon vegetable oil
2 teaspoons chopped fresh dill
Mix together the hash brown potatoes, mayonnaise, horseradish, pepper, onion powder, and salt in a bowl. Divide and spread the potato mixture on the top side of each salmon fillet. Heat the oil in a large skillet over medium heat. Using a spatula, gently put the salmon, potato side down, in the skillet and sear until golden brown and a crust forms, 4 to 5 minutes. Turn the salmon fillets carefully and cook for an additional 4 to 5 minutes. Garnish with fresh dill before serving.”
