Shortbread cookies are fairly bland butter cookies that are crisp. So really cookie that has that kind of texture - crisp and a buttery flavor. There are lots of shortbread style cookies available besides the ones that are specifically labelled "shortbread".
I assume the cookie is to make the crust instead of using a more typical graham cracker crust?
I have recipes that use a raw cookie batter dough which is baked in the pan and then is filled with the cheese mixture and baked again.
