Same recipe as always I just double the eggs so a bit more protein.
2 cups flour
4 tsp baking powder
1/2 tsp salt
1/2 cup sugar (or your choice of sweetener)
2 cups milk (your choice of which kind)
2 1/2 tbsp oil (or less)
2 eggs (or use 4 like I do)
Whisk together into batter. Leave a bit of lumps, shouldn't be perfectly smooth or pancakes will be tough.

You can add eggs, replace milk with cottage cheese, sub whole wheat flour for regular, add a scoop of protein powder for each cup of flour, use Splenda instead of sugar. You'll get healthier pancakes that will keep you full longer.
(Honey is supposedly healthier than sugar but just as fattening!)
