When preparing meals prior to holidays, at what point does one decide to freeze vs just keep in the refrigerator until usage?

Anything cooked the day before and day of goes into the fridge. Anything earlier is freezer.

I purposely leave the things that can’t or don’t get frozen to be done last and during those times.

This is just my opinion and how I work my kitchen

This. I plan my cooking schedule according to what can be frozen and what needs to be made fresh.

Depends on the food and how long it lasts in the fridge. Usually anything made the day out so before y"t stays in the fridge, anything earliest is out in the freezer. I leave all the vegetable dishes and other things that can't be frozen to make on those days.

I prep/bake/etc, all meats (roast, meatballs) before, so all that I freeze.
Dough with meat (franks, deli roll, kibbe, etc) prepped and frozen
Fried fish- fried and frozen
Sauces- made and frozen
Dessert I don’t make, but would freeze if I did
Challah I make before and freeze
Dairy casseroles eggplant parm, baked ziti- freeze
Dough with dairy (boureks, calsones, etc) prepped and frozen

All above items I made last and this week, so it’s well in advance.

Chicken, Cooked Veg - I’m planning to make on Friday.
Salads - fresh before serving

My daughters are coming for YT, and they do help A LOT.
