I have never made it before and would like to try it today for supper.
I have the ground beef and lasagna noodles. Anyone has a recipe?

I don't exactly have a recipe, I just make a sauce with lots of veggies and layer it with the noodles.
I usually sautee onions and garlic, add a box of mushrooms, add the meat, then add a bag of frozen mixed vegetables such as pepper mix or sugar snap pea mix, cover the pan, let the veggies cook, then add tomato sauce (and add whatever spices you like).

I brown over the meat in a frying pan in its own fat & break it up into little pieces as it cooks. Then I add spaghetti sauce to it.
As a cream/cheese sauce (aka bechamel) I use this recipe:
5oz margarine
1/2 c flour
4 c hot beef broth (I use the Ozem powder)
dried oregano
salt & pepper
Melt the margarine. Sprinkle in the flour & work into a smooth paste, cooking until the flour browns slightly into a golden color. Gradually pur in the hot, well flavored meat broth, stirring to prevent clumps. Add seasonings.
Put lasagna noodle, then meat sauce & then bechamel. Keep layering until you're done. I end with bechamel. Enjoy!

here's mine:
Meat Lasagna
Sauce
1 tbsp. oil
1 onion, diced
1 clove garlic, minced
1 green pepper, diced
1 lb. Ground beef
1 16 oz. can tomatoes, with liquid
1 15 oz. can tomato sauce
2 tbsp. parsley
1 tsp. sugar
1 tsp. basil
½ tsp. pepper
8 oz. lasagna noodles
½ tsp. oil
In a 10 inch skillet, heat oil and sauté onion, garlic and green pepper until soft. Add ground beef, stirring until meat browns. Add tomatoes with liquid, tomato sauce, parsley, sugar, basil, salt and pepper. Heat until boiling, stirring occasionally. Simmer uncovered for 30 minutes. Cook noodles and rinse in cold water.
Preheat oven to 350. Cover bottom of 9 by 13 baking dish with sauce mixture. Line with noodles, and spoon sauce over noodles. Add another layer of noodles and top with remaining sauce. Bake covered for 45 minutes.

A healthy (and delicious alternative) is to cut eggplant lengthwise in thin strips and layer that instead of lasagna noodles. It tastes great and is much healthier!

Eggplant is a great idea. I think I am going to make it tomorrow for dinner.

Cook the eggplant in the microwave first and then drain out the excess water, then layer it with the sauce and bake, that way the sauce will be less watery.
Personally, I just layer the eggplant raw, and if the sauce gets slightly watery, I don't mind. It still tastes great.

I don't know if this works but I was told that if you salt the eggplant and leave it in a colander then all the excess water will drain out. Then wash off the salt before you use the eggplant.
