I have a bag of raw almonds sitting around like for 3 months.
I'm wondering if I can freshen them up by roasting them? and how would I do that in my oven?
also, how and when would I add salt?
and are there other spices that are recommended to add?

We roast fresh, raw almonds all the time. Just stick them in in one layer at about 400 for about 10 minutes. They should get a drop darker and smell nutty and they're ready.
