Ground almonds

I have many sealed bags of ground almonds from pesach in my pantry. There’s no expiration date on the bags. Are they still good? Will they last until next pesach if I leave them there or put them in the freezer now?

No they will prolly be rancid.
For future, keep them in the freezer to prolong shelf life.

Put them in the freezer now. They may not be rancid yet. They will last in the freezer.

Would anyone have a recipe for ground almonds? I ended up with one bag in my regular pantry and would love to use it

You can use it to 'bread' chicken cutlets.

I love between carpools almond flour biscotti - I replace the potato starch with any flour I have, even whole spelt, for chometz version. It's way more nutrient-dense than regular biscotti.

Biscotti Kosher for Pesach
Ingredients
3 eggs
1 cup sugar
¾ cup oil
1 teaspoon vanilla sugar
2 teaspoon baking powder
3 ½ cups almond flour
½ cup potato starch
8 ounces chocolate chips
Instructions
1. Preheat oven to 350ºF. Line a baking sheet with parchment paper.
2. In the bowl of an electric mixer, beat eggs, sugar, and oil for 6-7 minutes. Gradually add in remaining ingredients.
3. With wet hands, form the batter into a loaf on the prepared baking sheet. Bake for 25-30 minutes.
4. Let cool. Slice into ½ inch slices on the diagonal with a serrated knife. Place slices back on the baking sheet sidedown and bake for another 8-10 minutes until lightly brown. Let cool to crisp.
