Thoughts on if ground chicken meatballs in red sauce from the crock pot would be good shabbos day? Would they dry out/overcook if totally submerged?

They will get very dry. Even beef meatballs get mealy so chicken all the more so. I have made a dry meatball before and you can serve it with a dipping sauce and you have less reheating issues.

You can make them dry , just sautéed
Make the sauce seperate
Keep the sauce on the blech from before Shabbos
Serve the chicken balls room temp (or put on the blech Shabbos day, if your Rav allows) with the hot sauce
