how does it compare to ground beef?

If you add part minced chicken, plus water in the mixture, it will be nice and moist.

Dark ground turkey is delicious (not sure why they added the word goulash). It's moist and flavorful and can be used in place of any ground beef recipe. I prefer it over dark ground chicken. (I don't love ground chicken or ground turkey from the breast, which is dry.)
It tastes a bit like ground veal.

Where I live, they don't sell dark ground turkey. Only the dry part.

Yes you can make meatballs and bake them 20-30 minutes until done (I mean seasoned, not in sauce).

I like it with just spices.
Also with breadcrumbs, egg, garlic, onion, salt.
I don't flatten or spray. We eat baked meatballs over spaghetti or inside pita with avocado tomato salad (the spiced one).

You can use it any way you might use ground beef. We particularly love it as meatloaf, but I also use it for burgers, meatballs and stuffed vegetables. It is tasty and not dry at all
