I put in quartz counters (it’s the type made from crushed quartz I think) it was inexpensive (less than 2k for small kitchen)

Don't redecorate for what will be fashionable in 10 years. None of us can possibly know that.
Repainting cabinets can be expensive and has to be done well to last.
As far as re-using granite, that assumes a future owner will love the exact current layout but will want to replace the cabinets. You would do well to ask the fabricator at the granite yard you use whether they would even do that. For sure only if they are the yard you use now, and maybe not even then. In 10 years, if the cabinet boxes are in excellent shape, refacing the cabinets might be a better option.
I am a kitchen designer, and if I were you, would make the kitchen work for me now, whether that means re-doing the whole thing or just replacing the counters.

Your contractor is seriously out of touch; delusional or trying to maximize what he is making on the job.
The return on investment for a kitchen is not going to double in value.
The return on investment for a remodeled kitchen isn't even 100% let alone 200%.
In 8 years your kitchen will be "used" as will any other remodeling that you do.
The value of your home will be determined by what other houses are selling for in the immediate vicinity an an 8 or 10 year old kitchen will not be viewed as a something other than a 'kitchen"

This isn't true as there are all kinds of granite and some are breath taking.
What is true is that the "builder grade" granite that was ubiquitous a decade or more ago - Ubatuba and Baltic Brown is considered builder grade or unappealing.
But if you go to a good stoyeyard the variety of granite is astounding - or you can just google and look at images.
Corian is making a comeback especially white Corian because it is so practical and is very fresh looking.
I considered quartz but it looked manmade and artificial - plastic and so I didn't want it.
