I want to serve chicken cutlets this Shabbos but I'm bored of doing all the different variations on shnitzel (I don't want any kind of breading- bread crumbs, corn flake crumbs, matza meal, etc.- none of these). Also my side dishes are more on the sweet side so I want a tasty (and tasteful!) but not especially sweet recipe. Please post any ideas! Thanks!

How about sesame chicken ( I think I've seen recipes posted before)
I make a chicken cutlet that is not sweet at all, but very easy and tasty.

I spray the pan, lay out the cutlets and cover with enough lemon juice to pool a little on the bottom. Then I sprinkle the cutlets to taste with garlic powder, oregano, black pepper and paprika. Bake until juices run clear.

This is very light and works well with a lot of things.

I have a sweet & sour nuggets recipe. It's not in front of me, but its eggs, flour & spices (I think) You dip the nuggets in this (it's a very thick batter) & fry them. Then you make a sweet & sour sauce to pour over it. If you're interested, let me know & I'll pull it out. I know it's sweet, but you can choose another sauce to make. it's the batter & frying the nuggets that are the best.

Spice and Spirit has a recipe for curried chicken. In large quantities it's somewhat labor-intensive b/c you have to stir-fry everything, but it's a real treat if you like curry. you use cutlets cut into chunks.

marinate chicken cutlets peices, in spices and oil

puff pastry squares
pastrami

place two slices of pastrami on puff pastry, to cover the square brake in half if need be. Put chicken on top and fold pastry like a danish. folding two corners into each other.

egg wash and and sesme seeds, and bake on 375 for about 30 hour

Spice and spirit has a really good recipe called chicken and peppers, I believe. I made it last night for dinner and it was just delicious. Not sweet at all, and not difficult. Would post it, but holding a baby and too hard.

daisy, I make that recipe too. it's absolutely delish and the chicken stays soft - doesn't always happen in similar recipes.

Queen - here you go:


Sweet & Sour Chicken Chunks

1 lb. chicken cutlets, cut in to chunks
1 (20oz.) can of pineapple chunks, juice reserved
2T cornstarch
1/2 c corn syrup
1/4 c cider vinegar
3 T soy sauce
2 T ketchup

Batter:
1T soy sauce
4T cornstarch
2 eggs

Mix ingredients for batter & add chicken chunks. Mix to cover the chicken pieces completely. Fry pieces until golden.

Mix ingredients for sauce (without the pineapple chunks). Bring mixture to a boil until it becomes sticky. Remove from fire, add pineapple chunks & pour over chicken pieces.

Enjoy!

I just made this today and it was great! And easy to make.

(For spices I used salt, pepper, garlic powder, oregano, thyme and zahatar.)

I have a great recipe that always gets requests for the recipe!!!!

I serve this as an appetizer or main dish.

Take a flaky dough square and inside you layer:

1. Stuffing-You take challah-soak in water and squeeze out excess water.
Mix with I egg, parsley flakes and soup mix.

2. Piece of chicken cutlet (I cut into chicken nugget size)

3. Fry lots onions and add corn flake crumbs and mix.

So you have the square of flaky dough in the palm of your hand. Add number1 ,2, and 3 and fold all corners into the middle. Turn it over and put on baking sheet. (so the folds are on the bottom) .

Brush with egg on top. A big pack of chicken cutlets should make about 15-20 of these. Bake of 350 for about 45-1 hour till looks golden.
I serve this with mushroom-onion sauce on top. It's YUMMMMMMMMMMMM.

I ended up getting some interesting (read: strange) new recipe from allrecipes.com. If it comes out good, I'll post the recipe. It smelled amazing while it was baking though!

Dip chicken pieces into ketchup and mayonnaise mixture (50/50) then coat with breadcrumbs!!
Easy and yum! Very Happy

Oh, and it freezes really well - raw or cooked.

the same works great with mustard and mayo, and I add a bit onion powder. delicious under the broiler.

(need to eat right away for best taste)`````

I make this from a Hellmann's mayo recipe. They say:

1 chicken (though you can do it with cutlets too)
1/2 cup mayo
1/4 cup ketchup
1 1/4 cups of italian (seasoned) bread crumbs
add 1/2 cup finely chopped onions to the bread crumbs

really good! and I mix leftover bread crumbs in the leftover mayo/ketchup mixture and add it to the pan of chicken, yummy

the above is the variation to the regular recipe of just 1/2 cup of mayo, no ketchup, no onion

but didn't the first poster say she wants recipes WITHOUT bread crumbs???

I FINALLY made Slimingal's recipe yesterday and they were REALLY good.
Yes, measurements would've been helpful but I kind of just followed my common sense.

I took whatever challah rolls I had sitting in my freezer. 5 LARGE rolls would be great.
parsley flakes- as much/little as you wish. (I used a lot)
I used chix soup powder/mix/flavoring
Fry about 3 large onions.....

I got 24 of these and they were VERY good!!! (we had them for supper last night, the rest I put in the freezer in quantities of 4.)

One addition: I felt it needed a sauce poured over it.
For something easy: just pour warm duck sauce over.
I personally made a glorified duck sauce recipe with honey, soy sauce, corn starch and some water added to duck sauce... making it into a gravy of sorts.
