anyone has a VERY hard time finding DUCK?
Not even talking of glatt, that is never found here as far as I know, but just plain regular? I haven't seen it for months, and it's even disappearing from restaurants now!!

Oh, Ruchel.. I think the proper posters of Imamother are just shunning you because you improperly put "duck" in the "chicken/turkey" forum -- you need PERMISSION to join the closed Duck forum, or the other duck recipe posters will get embarrassed and have to post all their yummy duck tips as Amother.
No, actually, it might be that the non-French don't eat much duck anyway? You're right it's not too common here; and the only restaurants I have seen it are either Chinese or VERY fancy.

Which is a shame, because duck is delicious. I became a vegetarian, and duck and salmon are the only things I miss.

I spotted ducks at local kosher butchers before R-H and Succot.
Though I always thought they're quite fatty and never cooked them myself.
Shame... I will let you know if I ever have a chance to visit Paris any time soon.
I can just freeze them, right?
Funny it used to be the other way around. I used to bring in goodies we had
difficulty finding in London, like charcuterie, cheese and Demyel chocolates!

they had duck in my local kosher shop. Not much else, but they did have duck.
Maybe its a french plague?

Too expensive - haven't even looked. But from the few times I've had it - YUM!

Wow. I told my dh, he was so surprised! But it's true we eat from the rabbinate list (non hechshered) so we compare with the finest... for parve chocolate it's really good now that I think of it (we don't eat parve chocolate except chocolate sauce for "new cuisine"), and the boxes are also nice.

I've started to like dark chocolate more now, it is much better for you then milk. Also what else do you serve after meat?

After meat I would rather wait 3 hours and have the real thing, although for desserts sometimes we have used parve like for chocolate cakes, too to be able to eat all the time. Problem is, parve needs to be top quality or it's not sugary enough, very sour... yuck. So often I would rather wait unless I know there could be a pressing need (pregnancy style ).

By the way my dh who loves meat shopping (lol!) remembered today when he sees duck, it's frozen and in the poshest butcheries only, up to 40 EUROS / KILO (15 euro for the not kosher). Soooo not worth it, especially frozen...

Dark chocolate IS the real thing! even gourmets will tell you that.
The problem with unhechshered dark chocolate is that it is often made on the same machinery as milk chocolate, eg green and blacks.

Yup, I know gourmets don't like milk chocolate so much... but they don't know what they miss!
About unhechshered stuff, you have to see on the list if it's written you can trust that it's not done on the same machines, then it's ok. If not, then not. [That's why many charedim will eat things on the list if they don't contain dairy, but not if they contain dairy (because of CY). ]
Although according to what I hear around many MO will consider it parve anyway because of the 1/60. lol
I don't think I've been in the situation, because it involves two types of chocolate I would rather skip (parve + dark). I would need to be very hungry
My husband has checked one day, and all the dark chocolates (more than 30!) have written "may contain traces of milk" or "made in a place where there is milk", so he says since laws are so strict here (often they say it just to cover all bases in case someone develops an allergy), a chocolate where it wouldn't be written at all could be considered parve. BH for these "picky" laws lol.
By the way in bio shops, there are chocolates with no milk traces, for those who are vegetalians I suppose. But it's extra expensive.

ruchel - I too prefer waiting for the real milky stuff ... much tastier although I do love chocolate cake and other parve stuff when I'm meaty ...

and as far as duck is concerned ... I can try to catch one for you - they fly north this time of year ...
my father gets them on ocassion (in brooklyn) ... never liked the taste (not that I would dare taste it) but when my mother cooks it always looks delish ...

Unless you talking about ice cream, for which dairy is a true real thing, I tend to disagree. But milk chocolate is not even a chocolate, it's sweet confection. Dark one with high cacao content is the real thing. Mmmm!
And speaking of ducks, I have couple sitting in my freezer. My DS convinced me to buy them l'kvod Yom Tov and I didn't have time to cook them. I might have them for his birthday. I love duck, but it's so expensive. Now my son is in the quest for goose. I’ve never seen it in the stores.

I love dairy ice cream, I don't even eat pareve, unless it is sorbet.
I love good milk chocolate as well...but I guess my taste buds are maturing, I started to enjoy dark chocolate too.

dd3 has mature taste buds too ... she likes organic dark chocolates ... or is that just a health faze ... I do love these raspberry filled dark chocolates from ghirardelli ...
