Sliced eggplant?
Something pretty simple and baked, not fried…
Looking for an easy and tasty recipe

Bake the eggplant slices as per the package instructions.
Then layer in a baking dish:
some sauce on the bottom
eggplant
sauce
shredded cheese.
Repeat layers until no more eggplant.
Top with sauce and shredded cheese.
Bake for about a half hour covered at 350, then 10 minutes uncovered at 400 (for cheese on top to brown a little).
Enjoy!

I heat them up in a Betty Crocker for a few minutes on each side with a bit of Pam, then follow directions above.

I make this all the time.
I bake it in my betty crocker.
Layer the eggplant sticks at the bottom, mix with tomato sauce, and cover with cheese.
Ready in less than 10 minutes.
