Esrog jelly

Does anyone have a good recipe for esrog jelly?

I used the one form the bobov cookbook, yellow with green spiral

Soak esrogim for 3 weeks, changing water daily.
Then slice thinly removing all seeds. Cook and drain water 4-6 times. Then I forgot exact measurements but like a half a pound of esrog to a pound of sugar..,not sure, might be opposite. Cook sugar with juice from 1/2 lemon and a bit of water till it’s like honey. Add esrogim, cook for 2 hours.
Then I blend it. Was delicious!

Please make sure you are using food grade esrogim. Esrogim sold for Sukkos are generally not safe to eat, they have so many pesticides on them they’re not considered a food.

I know.. but it is our minhag to cook the esrog from succos for tu bshvat

I would definitely ask about this. I don’t think a minhag trumps health and safety!

Cut up esrog into round slices as thinly as possible. Remove pits.
Cook up 3 times spilling water each time once it boils. Peel and cup up quince. Add to the pot of esrog after the esrog boiled 3 times. Add water and 1 cup sugar. Cook 3 hours until soft.
