See title.
Alternatively, if I bake it today or tomorrow, will it last until Shabbos? Won't have time to do it on Wednesday.

Does it need to be baked when defrosted or is it fine to let it defrost at room temp?

Yes I bake in advance, freeze, and defrost.

Years ago I heard that people do this but I couldn’t stomach the thought and never did it. Recently we were traveling and I had to bring along all the shabbos food cooked in advance. I brought along cooked, frozen fish and it was totally fine.
It’s a good idea to cook it today and freeze. I would do it again.
