Does it need to be baked when defrosted or is it fine to let it defrost at room temp?

Years ago I heard that people do this but I couldn’t stomach the thought and never did it. Recently we were traveling and I had to bring along all the shabbos food cooked in advance. I brought along cooked, frozen fish and it was totally fine.
It’s a good idea to cook it today and freeze. I would do it again.
