Help me modify this recipe

I found this somewhere on imamother posted by anon.

ZUCCHINI KUGEL

6 medium zucchini peeled, quartered & sliced (the pieces will look like triangles)
1 medium onion chopped
1 cup flour
1/2 teaspoon baking powder
1-2 tablespoons onion soup mix (to taste) **
4 eggs
1/2 cup oil
salt & pepper (to taste)


Mix all the ingredients together. Bake, uncovered, in a greased 9''x13" pan at 350 degrees for 1 1/2 hrs or until set & golden brown.
It freezes pretty well.

** I first tried it without onion soup mix and it didn't taste that great. So now I use Lieber's onion soup mix WITHOUT msg. It still isn't the healthiest choice, but I guess it's better than msg. You can choose to make it without any soup mix, but then I can't guarantee the taste Wink



sauted onions was suggested instead of soup mix.

would I just saute one medium onion from the recipe or add more?

should try to drain water from the zucchini?

can I saute the zucchini together with the onions for better flavour or will it shrink too much and the proportions/volume will be off?

I don't remember the recipe but a few years ago I made my own onion soup mix and it was pretty good! Google a healthy recipe for it.

I've made it with very thinly sliced zucchini, a few crushed garlic cloves, 2 tsp table salt, and then taste the batter to make sure salt amount is good. It's very good.

I make this recipe. The whole point is that you don't need to cook the zucchini before.

If I read this correctly, your only issue with the recipe is the store bought onion soup mix?

I make my own.

Here's the recipe.

¼ cup dried onion flakes
2 tablespoons sodium-free beef bouillon granules
¼ teaspoon onion powder
¼ teaspoon parsley flakes
⅛ teaspoon celery seed
⅛ teaspoon paprika
⅛ teaspoon ground black pepper

I made it today.
it came out quite good.

I sauteed more than a few onions and then after a few minutes I added the zuchinni.

you are right.
in middle cooking I noticed liquid,
it was prob also from the onions. not only the zucchini.
I drained it. so it wasnt properly cooked.

what happens to the water in the zucchini when leaving it raw?
does it not wet the kugel whilst baking?


if I just saute the onions and see liquid should I drain it?
does it not drain away flavour?

thats correct.
though, I also wanted to know if I can saute the zucchini and onions for better flavour and texture.
how will it affect the recipe?


can I use any spicy flavoured salt?

Don't touch the recipe it will be gross and sloppy.
Just use 3 crushed garlic and 2 tsp salt and skip the soup mix.
