It’s a sheilah; aside from the issue of borer that might come up, it’s melachah.

As long as you are not sorting or folding along lines it's okay.

if it is not for shabbos, are you still allowed to do it?
are you allowed to take full baskets of laundry of towels and fold them?
would it fall under “uvdin dichol” (weekday activity?
I always understood that you aren’t allowed to do things on shabbos that are for after shabbos.
I would love to be able to fold my laundry while it’s calm on shabbos.

I was taught that you can't fold laundry on Shabbos. I don't think you can do it on Yom Tov either, ask your lor, but I do give it to the cleaning lady to do on Yom Tov, that is allowed.
I'm happy to have clean laundry. Nothing happens if you take it out of the laundry basket and use it, or you can make quick piles on a table before yom tov so you don't have creased clothing. (I'm talking about things that dont need to be ironed)

I never used to, only started to a few months ago when I asked my LOR and he said if you take items at random there's no issue.
What other melacha would it be?

If there's a load of laundry on my bed, fold it when I want to go to bed. Even on shabbos or yom tov. I was told it's allowed.
