By 2 meals do you mean lunch and dinner?

I was wondering the same thing, what is this about two separate meals in the afternoon/evening before YK?

The first is like lunch at 12:30/1:00 and it’s challah honey fish salad coleslaw because we are not supposed to have fish at second seuda

The second seuda is like 4:00/5:00 so yes we’re hungry again and have:
Challah and honey
Soup and kreplach
Chicken
Potatoes
Rice
Apple kugel
Honey cake

Like lunch and supper

Some ppl have minhag to eat 2 seudas before Yom Kippur. And specifically eat fish as part of the first.

Are we supposed to have lechem Mishnah for the seuda? Or we can just wash on any bread?

My family only had one meal when I was growing up.
I only learned about it from dh when I got married.

You only need one challah. We do use a whole one just bec it is better to make a bracha on something whole.
