@amother denim- I sometimes buy ready seasoned raw spatchcock chicken from meat maven or just cut down back spine with a scissor so it lays flat and drizzle extra light olive oil and rub whatever spices you like- I do salt, pepper, garlic, rosemary. then just bake until juices run clear

From an old heimush simcha cookbook

mix cornflake crumbs with salt, pepper, paprika, and garlic powder.
2 1/2 lbs chicken cutlets. Cut into nugget sizes.
Dip chicken in egg and then the cornflake crumbs.
Bake in a grease baking pan at 370 for about 25 minutes or until done.

mix:
1 cup duck sauce
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup sesame seeds

Pour on top of chicken and reheat until heated through.

Another easy recipe is from a binah magazine

Oven Baked sesame chicken:

Source https://www.imamother.com/foru.....57733
Original was in binah

1/2 cup brown sugar
1/4 cup vinegar
1/4 cup olive oil
1 Tbsp mustard
1/4 cup warm water
1Tbsp sesame seeds
Fresh parsley, optional

Preheat oven to 350. Spray a 9x13 with cooking spray.
Place the cubed chicken in a large Ziploc bag, then add flour and Shake the bag to coat the chicken. Lay the chicken on the bottom of the prepared pan.
In a medium bowl mix together the ketchup, brown sugar, vinegar, olive oil, mustard and water. Stir until smooth. Pour over the chicken and sprinkle with sesame seeds.
Cover the pan tightly and bake for one hour. Then uncover the pan and bake for an additional 15 minutes.
Sprinkle with additional sesame seeds and fresh parsley before serving.

A standard Shabbos meal of fruit salad, challah, soup, chicken, fresh garden veggie salad and either potatoes or potato kugel. Maybe an additional cooked veggie like ratatouille or beets. Hubby likes cholent before a fast, he says it helps him fast better, so maybe I'll make a vegetarian cholent instead of plain potatoes or kugel.
