I believe if it tastes sweet it’s fine.
A neighbor of mine just told me they don’t use mayo on RH cuz it has vinegar…l

We don't eat anything with vinegar, so I'd freeze it for Simchas Torah

I’m curious where the buck stops?
If the company puts in vinegar it’s okay, but you dont?
Just trying to understand….
I always knew- don’t eat anything sour no matter if it was made of vinegar or lemon etc…

We hold that if it also has sugar or sweetener & it tastes sweet, it's fine to eat.

It's really a matter of YOUR minhag. But the fact that it's sweet and tangy (maybe not even sour) makes me think it's probably fine even according to your minhag. Another factor might be how much it adds to your oneg yom tov.

We hold as long as it isn't the main ingredient we can eat it.
Ask your husband or Rav what you hold.

Me, too.
And if it's not the type that can be frozen, I'd eat it for supper today or tomorrow.
That being said, I do have a slight tendency to go a bit overboard with minhagim.

About mayonaise....since it contains vinegar, I wouldn't use it straight (as a dip or topping). I would, however, use it in a salad, since in that case the vinegar would only be an ingredient of an ingredient.
Makes sense?

You can check Kitzur Shulchan Auruch
Siman 129 Seif Tes
It says it clearly.

Looking at the English (Chabad.com), I see it says "we should/should not," just as we "should" wish each other a shanah tovah. Obviously there are many mitzvos one gets in giving a brachah to another Jew, but what is this source for these particular conducts to be on the level of mitzvah? D'rabbanan? D'Oraisa?
Here is the Hebrew: וְאֵין לְבַשֵּׁל אוֹתָם בְּחֹמֶץ, כִּי אֵין אוֹכְלִים דְּבָרִים חֲמוּצִים אוֹ מְרִירִים בְּרֹאשׁ הַשָּׁנָה

And if the food tastes sweet despite the vinegar do we care about the vinegar?

This is where minhag comes in. If you're not sure, ask your moreh derech for clarity.
