How can I repurpose lots of baked salmon

I had lots of cooked salmon leftover from shabbos and I would love to repurpose for Yom Tov- any ideas on what I can do with it ?

I smash it up with mayo, garlic flakes and diced onion, salt and pepper. It makes a great spread for challahs.

You could also make a cooked salmon sushi. Or serve hot with red Moroccan fish sauce poured over.

You can make it into patties, or flake it, add eggs and spices and put it into flaky dough squares and bake it for a delicious fish dish.

I would break it up into small pieces, grill it for a few minutes with a spicy sauce. Then you can freeze it in small pans and add it to salads

As another user recommended, I would suggest making salmon patties.

The salmon can be mashed in a bowl with matzo meal, seasonings (salt and pepper work, depending on how the salmon is already seasoned), and 1 egg, a handful of onion, then pressed into patties and fried in oil.

Mash with mayo and egg and spices put in puff pastry sheet roll up bake and served sliced with dip. Salmon Wellington !
