Looking for recipes for my Yom tov menu

1. Beef stuffed capons- ground beef and pastrami
Or pulled beef stuffed capons
2. Carrot muffins using baby jars
3. Pulled beef gnocchi
4. Delicious no-fail roast, not sweet. (Already have French roast with onions, mushrooms, red peppers, and seasonings, so something different.)

Recipes should be simple but delicious, heimish style, no kishke, rice, or vegetables (maybe I can get away with onions), no strong flavors or weird ingredients

Can you please help me?

1. Beef & Pastrami stuffed capons- you can totally stuff each capon with a pastrami wrapped raw meat roll like these

I usually just stuff with lots of pastrami- shredded and mixed with a sauce, then used as stuffing in each capon

My no fail roast recipe:
Slice a bunch of onions into half circles, fry on oil till soft and a bit caramelized. push onions to the side of the pan and brown roast on all sides. Put roast into crockpot/oven proof dish, smear with tomato paste, sprinkle salt and then spread the onions on top (stops the roast drying out). Add water to pan and scrape out flavor from onions, pour over roast. If I have some chicken soup, add 2 cups chicken soup around the roast, otherwise add water. Leave overnight in crockpot/bake for 3-4 hours.
Put meat in fridge to cool wrapped in foil, pour gravy into big foil pan and put in fridge. Once everything is cold, slice the roast and skim the fat from the gravy. Add meat back into gravy, and heat before serving.

It doesn’t need to be exact
Pulled beef gnocchi
Package boneless flanken( can use kolichol but I prefer the boneless flanken)
3T tomato paste
Salt
B pepper
2 T maple syrup ( can probably use brown sugar) use more if you like it sweet
2T vinegar
2 onions sliced thin
5 cloves garlic sliced thin
1 C beer or red wine or 1/2 C bourbon plus 1/2c water
Cover tightly and bake at 275 for 5-6 hours

Once cool shred meat ( keep liquid)
Cook gnocchi per package directions
Add to meat mixture and let simmer for a little.
( if you feel it’s a little dry you can add some water)
