Menu challenge

I need a minimalist menu for the 3 day y"t that still works but is very very very quick & easy to pull together. I'm thinking 1 hour or less Confused

All awesome ideas welcome. I want it to still feel like y"t even though I have something else going on that is challenging.

Thursday:
Buy simanim
Starter: lettuce with salmon cubes and bought Caesar dressing

Main: brisket with bone sucking sauce (bake 2.5-3 hrs covered) rest, and slice
Rice- bake 1 hr covered, add chopped deli before serving.
Roasted broccoli and sliced mushrooms with garlic cubes
Roasted butternut squash and shallots, drizzle with techina and sprinkle pine nuts (if you use) and zaatar.
Buy cake and ice cream

Friday lunch:
Pulled beef (chuck in a crockpot for a few hrs, mostly drain and pull when soft, add spice of your choice) serve on chummus with bought pita chips.

Kishka stuffed chicken capons, duck sauce on top and bake covered and then uncover.
Baby potatoes with rosemary and lots of whole garlic cloves, salt and pepper bake covered and then uncover
String beans sauteed, drizzle a mixture of Dijon mustard and mayo, sprinkle with sesame seeds
Lettuce salad with store dressing and veggie stick salad topping
Watermelon and grapes

Fri night
Chicken soup
Chicken
Popcorn cauliflower
Sweet potato rounds, roasted
Deli roll
Cake and ice cream

Shobbos day
Gefilte fish/eggs/liver/salmon
Or
Lettuce salad with chicken breast (bake with spices 20 min uncovered, turn once in the middle

Choulent
London broil
Bought schnitzel
Bought potato kugel

Melon, grapes, cookies

I hope this helps. I know some is bought, like dressing, kugel, schnitzel and dessert but those are time consuming to make
