Lately -when I’ve made tongue it tastes waterlog and flavorless

In my town we don’t get pickled tongue just regular

If I’m spending the money I want it come out SUPER yummy

Please post the best recipe and instructions on how to freeze

We prefer not sweet, but it is RoshHashana after all.

I don't have the recipe on me, and I'm honestly not sure about the different taste between pickled and not,
But we've had tongue in tamatoe sauce, Yum!!! - (and also sweet)
And also a mushroom sauce, also yum, but alot more time consuming. I can try and look up the recipes later.

Can you pickle yourself? Do you eat pickled for RH?
To me, the un pickled one was not worth the expense, But maybe I just didn’t know how to make it right

Sautée a lot of onions and some garlic. Add salt, pepper, paprika.
Put tongue into pot and add a drop of liquid. Cook low and slow for several hours until a fork comes out easily. Optional to flip tongue over after a while - around an hour and a half/two hours.
Peel tongue when warm.

Is the tongue boiled and peeled first?

I don't like pickles tongue. I always make unpickled. I make it in mushroom sauce and it's delicious. Boil tongue. When ready, cool and peel. Slice it. Sauteed onions, celery, mushrooms, garlic Add in tongue and cook together. Spice with salt and pepper. add in some water to make it more saucy. can add potato starch to thicken.

Oooh that sounds good

I would also like a sweet-ish but not too sweet sauce

When you're starting the recipe by boiling, add a nice amount of garlic cloves and salt - the way you would salt pasta water; generously. Also add a parsnip and turkey drumstick to the pot while boiling. It adds a lot of flavor.

Warm the tongue slices in it. Make a tasty broth to cook the whole tongue in with garlic, salt, add ins.
