After school snack for underweight 3yo?

My 3yo son has just started school and he's not the greatest eater in the best of times so hasn't surprised me that he's refused to eat in school so far. He's starting full days tomorrow and I want to have a good nutritious snack ready for when he comes off the bus, probably starving from not eating the whole day, any ideas? I can do just fruit/veg but I would like something to make up for the missed calories as he's already underweight.

Smoothie with avocado and hemp hearts

Or banana cocoa peanut butter nice cream

Salmon or avocado or something drizzled with cold pressed olive oil would be great.

He'd never eat salmon, but the avocado is a good idea thanks!!

1 frozen banana, 2 T natural peanut butter, 2 T raw organic cacao powder. Let thaw, blend. Scrape down as needed. Sometimes I add a T or 2 of almond milk if it needs liquid

Veggies with hummus , cheddar cheese or string cheese
Warm hard boiled eggs
Apples with almond or peanut butter
Dinner food is also fine after school

Yogurt (regular or pouch or frozen into ices)
Dinner
Veggies with a dip (hummus or a thick dressing)
Nuts or peanut butter on crackers
Oatmeal
