What does she want to do?
Online course?
Help out other mothers who are home with their kids?
Volunteer somewhere?
Just sitting around at home doing nothing is going to get difficult after a while, but if she actually wants to find something to do, just not camp, then work from there.

Is there a reason why she can't stay home? You say she's mature, so it doesn't sound like you're afraid if her running wild. Give her some downtime, and let her stay home and take a break for the first week or two. Then begin to bring up options for something to occupy her some if the time. Or give her some responsiblities around the house. Could ahe do some of the cooking for Shabbos? She'll probably be more open to suggestions after a week or two, when she's beginning to get bored.
