How to cook beets without losing the redness

I cooked my beets today and because they were peeled the color leaked out of them and they are less red.
Is there any way to get them to retain their red color (or get it back)?

I cook the beets with the skin/peel on them. Then remove it all afterward.

If you leave them in the cooking water to cool down, they go red again.

I often cook them in the slow cooker with a very small amount of liquid, and they retain their colour.

I roast them. Never noticed any color leakage.

Roast unpeeled, wrapped in foil. Hardly any liquid comes out.

I bake them peeled in a pan covered in foil at 400 for about 1-1.5 hours. Check if ready with a fork.

I leave them to cook in the pot and they regain their color.

I don't think that's the reason.
Beetroot is pH sensitive and probably you changed the pH towards alkaline.
Or you left them exposed to light for too long.
