It’s soft but not gummy and a bit runny.
I don’t even know how to explain it.
We call it heimish kugel. |
Have you asked them for their recipe/method?

do you care sharing the recipes you got from them, I'm curious if it's different from what everyone is suggesting

You bet I have.
They all respond the same way, come on, it’s potato kugel. Easy as pie. Takes 5 min.
Potatoes oil eggs water/seltzer salt etc.
and I agree that most recipes are quite similar. which is why I decided there must be some tricks. Which I did indeed fish out some here on this thread.

Sure
Here’s 1-
5 potatoes
5 eggs
1 plastic cup of oil
1 tbs salt
1 cup seltzer
Mix the eggs oil salt seltzer.
Add grated potatoes
Bake on 400 for 1 hour lower to 350 for another 1.5 hrs.

This question just got me thinking-
Do people not like to share their recipes ?
I am from out of town ,(European) so maybe I’m not familiar with this?
I find that many times when I ask for recipes some will say oh u like it? I’ll gladly send you some. Or, sure, I’ll send it to you when I have time.
Or , there’s no recipe. U have to be Hungarian for that.

I have a few questions,
what kind of potatoes
how are the potatoes grated
which size pan, and what type of pan (glass, metal, aluminuim...)

How come your recipe calls for 5 eggs to 5 potatoes, when others call for 6 eggs to 10 potatoes?

Which is why I turned to this forum.
Seems like I’m getting my answers here and then some.
I have some kugels on the counter already. My kids should be home shortly so the tastings shall commence.

We shall turn this question to the wider audience…
Anyone?
I have no clue.

awesome
but different potatoes need diff amount of the other ing.
so those are good questions to ask your neighbor, if you have one that you feel comfortable drilling for precise instructions. potatoes by weight always work better than by amount.

I hear. Hmmm,…
For today I only tried recipes and instructions that were given on this thread.
Let’s see if this can work. We’re about 5 min away from tasting.

amother OP wrote: | A regular blender? If this works I’m game, I happen to hate the Braun food processor. |
I have the Cleanblend commercial blender.
It's expensive but lasts for years. I used to buy a new blender every couple of months.
And for the other person that asked, no, 5 lbs of potatoes does not fit. We do it in 2-3 shifts.
It's so simple and comes out amazing.
From living with a professional chef for years, I realized that people over complicate cooking like crazy. And reading this thread is really making me realize that.

A lot of things I make, kugel included, I don't really follow a specific recipe. I just do what feels/looks right. So many people ask for my kugel recipe that I have tried to nail down a recipe, but I am Hungarian so... you do what feels right:) No recipes needed! I am glad to share any recipes I do have though, or how I make a soup or other dish that I "just guess". I don't think it's a universal thing that people don't like to share recipes.

I feel like shouting this !
Listen up everyone.
All your time invested In Replying paid off.
We have some really clear winners.
None are stiff and hard.
None are gummy.
Not all are white. But does that change the taste?
Some are better tasting than others.
I will wait for the adults to come home and chime in.
I am sooo soo excited!!
Thank you to every single Ima who took the time to respond and care to help a family out.
I’ll keep the reviews coming.
