Or dress it up as a wellington - essentially salmon loaf but in puff pastry.

I wouldn't try making gefilte fish with canned salmon. You can look up recipes for fish quenelles but they're always made with raw fish.

I'm trying to understand what the problem would be to use canned. Would it be too dry? How about if I add extra oil?

It won't hold together. It's like browning meat crumbles first, and then trying to bind the taco-like-crumbled meat together into meatballs, to then cook in boiling water.

It's not going to work. Once fish or meat has been cooked (say in canned salmon) it's gone through a chemical change and the proteins won't bind together in the same way raw proteins do. No matter how many eggs or how much flour/matza meal you add it won't be gefilte fish. It will be like a salmon patty log

So what's the difference between a patty and a log? It won't slice nicely?

It won't look, taste, smell or feel like gefilte fish and it will probably crumble when sliced

Add the egg and binder. Make individual patties and brown them in a pan. Otherwise you can try to cook the log, and you'll end up with cloudy water and pieces of fish floating all over.

I don't think you can boil it but you could bake it as a loaf.

Traditional gefilte fish is boiled, not baked.
