If you are making meals for someone else ask them what they like.
Also, if you want it to stay fresh when traveling in heat better that food should be frozen

I travel by car some yt so I try to have food that is portable, easily frozen, in one dish so no need to assemble on yom tov like with fancy greens, dressings, sauces, accessories just everything put together.
Some ideas that freeze well & are assembled before freezing
Appetizers
Lasagne roll ups with spinach
Pasta shells stuffed with pastrami
Deli roll
Chicken Wellington squares with broccolli mushrooms
Taco meat frozen, send along soft tortillas to fill on yom tov
Saute'ed shredded soup chicken with carrots & zucchini frozen, stuff into wrap on yt.
Soups freeze well
Butternut
Veg split pea
Cream of chicken zucchini
Broccolli
Cauliflower
Meats
Pickled Roasts
Minute steak with a sweet sauce
Pepper steak
Club steak with balsamic vinegar shallots
Capons
Sides
Potato knishes
Cabbage noodles
Pasta with crumbs
Angel hair pasta with spinach
Orzo with pastrami mushrooms
Veggie rice
Veggie quinoa
Shlishkes
Potato/sweet potato balls
Lukshen kugel
Apple strudel
Stir fry veg
Any fozen combo veg saute'ed with onions
Compotes
Cakes

Cooked fish in sauce gets mushy when traveling better is either baked fish, or take the gefilte or salmon out of sauce & put sauce separately in a container.
If you want fish to stay fresh better is marinated fish

I don't make near that amount of food as we eat in shul so much. make sure that you're eating all the meals at home and who is attending.
