Make your own chicken salad/pita. You can get a bunch of simanim in there, too.

Only do one course. Or a meaty soup or stew to replace the whole second.

Make a loaded salad. Like a chicken salad, deli salad, steak salad, salmon salad (if you don’t want to be fleishig). And then a broccoli/cauliflower/squash kugel as a side.

I don't like to. I'm going to prepare a London broil before YT and refrigerate. Slice thin and leave out to come to room temperature before the meal.

I’m making a cedar plank salmon with strawberry jalapeño salsa. Want it? It’s surprisingly simple

Everyone's getting there first. Fish, or fleishing protein with lots of veg, e.g. the steak/chicken salads or pepper steak, deli, etc.

If you can’t find cedar planks, just skip or use a little cedar plank spice on the salmon while baking.

Soak a cedar plank in water for at least an hour on a baking pan (they float, so I put a can of beans on top to keep it submerged).

Drizzle salmon with extra virgin olive oil, salt, and pepper. Bake on top of the wet cedar plank on 415 for 15ish minutes. Serve with salsa over top.

Salsa (just mix up and refrigerate):
2 C diced strawberries
1 diced jalapeño
1/3 C diced red onion
2 Tb chopped fresh mint or basil
1 Tb extra virgin olive oil
2 Tb lime or lemon juice
Salt+pepper
