This was a very good version of a classic dish. Who doesn't like mushrooms stuffed with mushrooms and cheese?
Parmesan Stuffed Mushrooms

Total time: 43 minutes Yields: 10 servings
Ingredients
½ cup Italian breadcrumbs - if using plain bread crumbs season them with Italian seasoning mix.
½ tsp salt
2 tbsp. garlic, chopped
1 tbsp. canola oil
½ tbsp. Fresh black pepper
8 oz. cream cheese
½ cup parmesan cheese, grated
14 mushrooms, stemmed, chopped
2 1/4 tbsp. fresh parsley, chopped
Instructions
Preheat oven to 300 degrees.
Separate the chopped mushrooms stems from the cap.
Over medium heat, heat the oil in a saucepan.
Toss in the mushroom stems, salt, pepper, and garlic. Cook for 8 minutes, remove from heat, and leave to cool.
In another bowl, fold in the cooked stems, breadcrumbs, cheese cream, salt, pepper, parsley, and mix to a fine consistency.
Place the mushroom caps on a greased baking sheet.
Scoop a spoonful of the mixture into the mushroom caps.
Sprinkle each cap with parmesan cheese and bake for 20 to 25 minutes.
Garnish with parsley.
Serve and enjoy!
