  • Preheat oven to 375*F. Prick the potatoes with a fork.

  • Mash the potatoes well, then mix with the sauteed onions and shredded cheese. Add salt and pepper to taste. Scoop the mixture back into the potato halves.
  • Using a spoon, make an indentation in each of the potato halves.
  • Place the potatoes in a baking pan (A large-deep disposable pan worked for me). Pour an egg into each indentation and season with salt and pepper. Cover the pan with foil.
  • Bake at 375*F for 5 minutes. Uncover and bake for an additional 5 minutes, or until the egg whites are set (it took the eggs twice as long, but it could be my oven...).
  • Sprinkle with additional shredded cheese before serving.


Yields: 6 servings (It yielded 2 servings for us, because 1/2 a potato would not be filling enough).
Note: One egg is often too much for each potato half. To avoid the overflowing, separate the egg and pour just a bit of egg white into the potato, then add the yolk (We didn't mind the overflowing).

P.S. We found the bag of potatoes inside an empty box that was going to be sent out with the paper garbage! LOL

I feel proud of my menu and that’s why I’m posting it, but if it bothers anyone, I’ll stop.

Sunday is my day off. Everybody eats, but I don’t really make it. I did make tuna and egg salad though, but that’s not really anything. We got a lot of bread because someone brought us from the kosher store in the city.
Monday lunch- vegetarian chili, homemade sesame french bread
Monday supper- honey sesame glazed chicken, green bean with mango salad, fried rice
Tuesday lunch- mushroom quiche, vegetable soup, and my daughter made corn bread yesterday
Tuesday supper- meatloaf, salad, chunky fried, sweet and regular
Wednesday lunch- baked fish fillets, salad, pasta
Wednesday supper- beer stew, rice, salad
Thursday lunch- corn empanadas and maybe cheese ones too, salad, onion soup
Thursday supper- milanesa, salad, apple kugel

My 17 and 20 ds said they really appreciate the food that me and my dd are making because they’re usually in a dorm Smile .

You are so organized! It seems like you cook all day! Your bochurim are lucky that mom is providing full meals like in yeshiva! You are an inspiration!

I am organized, but my dd helps. I don’t cook all day, but what else is there to do? My youngest is 9 and one of my boys help him with his school work.

Bh my boys are also helpful, some when asked and some on their own.

Empanada wrappers
Onion, diced
Oil for sautéing
Red pepper, roasted and diced
Corn
Cream
Salt
Pepper
Shredded cheese
Roast red pepper.
Sauté diced onions. Chop pepper and mix with onions. Add rest of ingredients and mix. Place spoonful of mixture in empanada wrapper and fold. Bake for about 20-25 minutes or fry.

snack-super snacks, tortilla chips, black & white cookies, cereal milk
Supper-leftover tomato soup & sloppy joe.
tried Rightees chicken pastrami wrap. It was delicious.

Friday-B- mini pizza bagels, cantaloupe with cottage cheese, yogurt
L-potato Kugel & farfel
Toamehu-corn flake chicken bottoms & tops. lukshen kugel. broccoli kugel. Apple strudel. Deli Roll. mini baked apples.
Seuda-baked salmon with crunchy onions.
chicken soup. whatever. Apple sauce.

Shabbos-
mini cheese muffins, rugalech.
seuda-
Fish/dips
eggs/liver/gala/veg/salad with chic peas
cholent/applesauce
Snack-cut up melons, shabbos party
SS-herring & lox
MM-waffles with ice cream

Sunday-breakfast-french toast & yogurt
Lunch-cottage cheese topped with crumbled lady fingers & milchig ice cream
snack-don't remember
Supper- leftovers

Monday-B-mini pizza bagels
Lunch-tuna melts/cereal milk
snacks-apple,pear,banana, tortilla chips
Supper-veg soup, schwarma with dips, salad, fries & falafel balls in pita.

Dinner last night was flatbreads with pesto, cheese and veggies

Tonight is miso apricot chicken with couscous and veggie to be decided

Tomorrow night is a zaatar chicken salad with grilled pita, chicken, lots of veggies and a zatar dressing

Thursday is broccoli and cheese baked potatoes

Breakfast every day is a choice of toast with spreads, cereal, yogurt or tater tots

Yesterday was poke bowls, tonight is salmon, sweet potato fries and bok choy salad, tomorrow is spinach quiche. That’s all I got for now

Last night was one-pan chicken cutlets, sweet potatoes, and broccoli.
Tonight's gonna be a fancy pants pizza with pears and pecans cuz I happen to have all the ingredients anyway

Monday- balsamic onion tuna steaks, baked macaroni and cheese , greek salad
Tuesday- meat tacos with all the fixings, red rice
Wednesday- planning to make the one pot chicken and brown rice from mishpacha adding spinach into the rice.
