Tater tot casserole with ground turkey and carrots. My only options for vegetables in the fridge were carrots and spinach, and I don't think spinach would go with tater tots.

Homemade BBQ sauce:
1 cup ketchup
1/4 cup oil
3 Tblsp brown sugar
1 Tblsp soy sauce
1 Tblsp balsamic vinegar
1 tsp mustard
1 tsp salt
1/2 tsp garlic powder
Boil the ingredients together until sauce is smooth. Do not skip this step! I tried it once and it didn't work so well. Pour sauce over cutlets and bake. Optional - add sauteed onion on top before baking.

I never made it before but I tried the other recipe wirh chicken thighs and couscous from there and it was delicious!
