Oh Italian wonder pot dish sounds great. Thanks for posting with link. We are having baked ziti, salmon and salad. I made doubles for a neighbor who is postpartum.
Pizza dough recipe: (Makes 2 good sized pizzas)
(adapted from a recipe online, don't remember where)
4 cups flour
1 teaspoon sugar
Half of a fresh yeast cube, crumbled
2 teaspoons salt
3 Tablespoons oil
1 and 1/2 cup water warm
I mix everything together and knead a few minutes until dough is smooth. You can either use it immediately or let it rise an hour and then use.
Usually, with fresh yeast you'd crumble it, use sugar and water to get it frothy.. with this recipe I don't always do that. It really can be used as a no-rise dough recipe. When it does sit 30min to an hour, the dough is thicker when baked, softer too.
*Dough should be a little sticky, if too sticky, use a little oil instead of flour.
I literally just made that last week! Sautee an onion, add all those veggies mentioned plus a red pepper (plus an apple if you wanna get real fancy). Cover with water, add spices, blend when done cooking.

I did it with onion, garlic, cumin, jalapeño, and dill. It’s cooking right now
