I should look through this thread for good ideas, because I'm blanking on tomorrow and I need to shop for some basics.
I do have a large pot of chickpeas cooking right now, so I'll probably use those somehow.

baked breaded cutlets
lettuce salad
green beans in sauce
couscous
Saucy hot dogs
Leftover challah for the hotdog sauce
Leftover chicken on the bone
Peppers and chickpeas salad (only me, hubby, and littlest guy will eat this)
Sure! Mix together 1 container cottage cheese, 1.5 bags shredded cheese, 2 eggs, defrosted and strained spinach, garlic, salt and pepper (or no spinach and no garlic and add some pinches sugar). Using Ziploc or pastry bag, pipe into raw manicotti. Spoon some marinara on bottom of large pan. Lay stuffed manicotti in one layer. Cover in sauce. Bake covered about 1 hour at 400. Sprinkle remaining .5 bag cheese on top. Cover and let melt. Serve.

I didn't make it tonight but am happy to share regardless:)
5-6 potatoes halved, cover with water and salt to taste. Boil until soft (can poke through easily with a fork.) Pour over about a plastic bowl full of the water that you boiled the potatoes in and spill out the rest. Mash the potatoes adding water in increments so that all water added gets "eaten up". Proceed until smooth. Add sautéed onions, salt, onion powder, garlic powder. (Alternatively, when sautéing the onions, you can throw in 2 cloves of frozen garlic. Skip garlic powder from spices.)
