I work full time (though a lot of it is from home) and I serve soup all the time. It's the ultimate fix-it-and-forget-it supper. prep the veggies and protein the night before, dump it in the pot in the morning, bring to a boil, and simmer all day. What could be easier?

You can leave it to simmer because you are in the house. Other than a crock pot, how else would one make soup when working out of the house?

And ok, ok, I get it everyone. What sounds like a long dinner prep to me isnt for others. Sorry I said anything!

Lol. I think I posted that I rarely make supper thanks to my hired help. I work loooooong hours and would probably just eat cucumbers and apples if not for the kids.

I actually made a really good cheating soup for shabbos this week in the instant pot. I sauteed frozen leeks, mushrooms, carrots, added a few chicken thighs that I did not use for the main, a box of imagine brand chicken soup some soy sauce and rice vinegar and set it for 30 min. It was really good! if I added ramen or other noodles it could have been a full meal and did not take very long to make.

It's from between carpools

Package chicken cutlets cut in strips
1 cup homestyle bread crumbs (or cornflake crumbs)
1/2 cup oil
1/2 cup sesame seeds
Dash black pepper
4 garlic cloves crushed (I just put garlic powder)

Preheat oven to 425.
Combine mixture and press the chicken pieces in coating well.
Bake covered on lined baking sheet for 10 min, then uncovered for another 10 minutes.

tonight was ginger/garlic tofu stir fried with asparagus

rice

and for the 2 kids that wont touch tofu- fishsticks.

I personally wouldn't mind leaving soup at a simmer on the stove when I leave the house - I often do. As long as the window is open a crack, I don't see any problems with it. Obviously, I wouldn't leave it on a high boil, but if it's steadily simmering away for four hours, I wouldn't think twice about leaving it.

I think we all have different ideas about what sounds complicated and what seems simple. My mother worked full time and she would leave a soup simmering on the stove all day, so I guess I grew up with that being normal.

Some leftovers from yest:
Broccoli soup. Cabbage & noodles. Roasted cauliflower.
+ mom3b2c baked crispy onion cutlet &
spicy potato & sweet potato fries

Onion cutlet was a hit & so ez! Everyone loved it. I made 2 pans one with the jam & one with mayo & spices

Last night's easy supper:

Pull soup out of freezer. Warm it up. Drop in balls of ground chicken/beef and let them cook in the soup. Voila! Heartwarming and filling supper! I served doubles and triples... Whoever felt like they need their starch, can eat it with bread dipped in. Yum!
