I make tacos as a do it yourself bowl. I make rice or quinoa, a protein like ground beef, shredded chicken, beans and cheese, then I cut up different veggies like lettuce/cabbage for crunch, tomatoes, avocado, corn. My kids like to layer it in bowls with whatever they like. Not everyone in the family likes taco shells and my really little ones find them hard to eat without a big mess.

I have no idea and I better get my act together.
One DD doesn't like ground meat lately. This is really cramping my style.
Last night was cream of cauliflower (instead of brocolli, as DD is allergic) soup and homemade pizza. DH had soup and leftover chicken.

I ended up having only 45 minutes for total prep and cook time, so I made:
baked ground chicken patties (I just flattened balls on a cookie sheet) with a homemade sauce on top
tasty broccoli (recipe from Pupa cookbook)
quinoa
