Okay, so what do most people do when using a frozen meal? Do you let it thaw out in the refrigerator 2 days before or thaw out on the counter or what?
I never learned these things from my mother.

Never thaw on the counter because the outside will reach the right temp for germs while the inside is still frozen. Thaw in the fridge or heat on the blech.

Some things, like roasts or soups, can go frozen into the refrigerator.
Other things, like kugels, I reheat before yom tov (or Shabbos) then put on the blech or in the crockpot. (I don't keep the oven on. Even if I did, I probably wouldn't have it on high enough for reheating frozen kugel. Not a safety issue, but quality.)
