I baked way too much salmon. Any suggestions how to repurpose?

Flake into pieces, similar to chunks of canned tuna.
Make patties:
approx 12-15 ounces cooked salmon
4 eggs
2/3 c. matzo meal or breadcrumbs
1/4 c. mayo
spices -- I use maybe 2 Tbsp. dried minced onion, 1/2 tsp. each salt and pepper, 1 tsp. each garlic and onion powder, sometimes some McCormick Montreal steak seasoning if I have on hand (and it doesn't clash with the flavors you used for salmon originally)
Pan-fry in olive or canola oil until browned on both sides, drain on paper towels.
You can adjust the spices to match the flavors already in the salmon. if it's more herby (dill, lemon), use more of that; if it's teriyaki, add a little more ginger and saute with a little sesame oil, etc.

Add to a salad or make into a dressing.
Add to cream cheese.
Mix with light sour cream to put on pasta or potatoes.

salmon salad
salmon wellington with spinach (although supposed to use raw salmon. I would add mayo to keep it moist.)
give it to a neighbor who just gave birth for supper!

Make a sushi salad - lettuce, sliced cucumbers, slivered carrots, chunks of mango and avocado, topped with sushi rice, crumpled salmon, and french fried onions. Use spicy mayo or sweet sauce as a dressing.

Salmon loaf.
Same recipe as salmon patties but bak into a loaf.
Before you put the fish mix in the pan, line the bottom and sides of the pan with tomato slices, then pour the mix.
When you serve it, flip it over on to a plate. Looks very pretty like that.
