Some have the nusah "l'hafrish challah min ha'isah".
On a related note, what do you do with the burnt portion? I learned you can't throw it out.

Thank you for reminding me! I still have the burnt piece from last Shabbos in the oven (can you tell I never get the opportunity to take challah?)

Once its TOTALLY burnt, what then are you supposed to do with it?

I think that once they're burned beyond recognition you can throw them out. That's what I remember learning.
