I am IYH having my parenst and siblings over for the meal...and I am SOOOOO excited! I want to make an amazing meal and need help with the menu.
SO far I have decided on:
Challah napkin rings and a BIG hamatash Challah (made already)
dips: Tomato, matbucha, pesto, eggplant, chummus, olive (all homemade)
salad topped with portobello mushrooms in edible tortilla bowl.
Soup- any good ideas? I want something different. bored of my usual ones which are butternut squash, potato zucchini leek, split pea, broccoli, etc. maybe a yemenit soup or hearty bean soup- any good ideas? also what to serve with it?
main-
meat- what roast is soft and easy, no ketchup, or prepared sauces pls.
roasted potatoes
chicken- either dark or cutlets but want something nice and different
quinoa- any good spices to spice it up with?
roasted veggies
what else?
dessert- ices and sorbet- how can I dress it up when serving?
pecan pie, hamataschen
which NON-ALCOHOLIC drink mixes can I make?
Thanks

Chicken soup with kreplach.
I made brisket, it's sooo easy; Brown the meat, flip it over, add wine water and salt. Enough liquid to cover at least 2/3. Simmer I think an hour per pound, it should be really soft nearly falling apart. I did 6 hours or so. Refrigerate till cold. Thinly slice the meat, thicken the gravy with flour. Reheat the meat in the gravy.
At some point taste it tho see if it needs more salt.

Everything sounds delicious but that's a lot of food. Maybe don't make such a hearty soup - no one will have room for all the other awesome stuff! What about something davka light, like a cold fruit soup or gazpacho?
Try roasting whole chickens stuffed with dried fruit - http://www.food.com/recipe/roa.....2106.

OMG! Do people really make all of that?! And with Shabbos coming right after?! I'm having guests and I was just going to do, like, chicken soup and schnitzel and some salads/dips. Oy.

Minute steak comes out very soft if cooked on a low flame for about 2 hours. You can also do it in the oven just make sure there's enough sauce to keep it covered. Do onion, lots of garlic, salt, pepper, and a bit of wine or orange juice.
I like to cook quinoa together with chicken to give it a delicious flavor.
