I use club steak for shish kebab.
Marinate 1.5 lbs of cubed club steak for 24 hours in a ziploc bag containing 1 tbsp red wine vinegar (to tenderize), 2 tbsp olive oil, 3 crushed garlic cloves, and 1.5 tsp kosher salt.
Remove fat. Thread meat cubes onto skewers. Arrange on cookie sheet.
Place oven rack 5 inches away trom heat source. Preheat oven to broil. Broil about 7-10 minutes. Flip kebabs and broil another 3-5 minutes. Serve immediately. (seriously.)

bigsis- what type of pizza stone do you have? Do you really end up using it? Do you also have a pizza paddle to get the pizza off? I'm curious because I am interested in investing in one- just not sure if it's worth it or if it'll just clutter my kitchen
thanks!

It's just a big flat rectangular stone... I didn't buy it actually -- DH brought it with him into the marriage . He had a pizza peel (the paddle thingy) to go with it, but for a regular oven, even on 500 degrees, it's not hot enough to need one.
I just make the pizza on a piece of parchment paper, put oven mitts on if I'm feeling sensitive (usually I'm quick enough that I don't bother) and slide the pizza out onto a baking sheet. Parchment paper is not exactly traditional, but after cleaning melted cheese off the stone just once I went with a cleaner option that doesn't seem to make a difference to the flavor/texture.
I used to ignore the stone, thinking it would be a hassle (see above re: cleaning melted cheese), but once I tasted pizza-stone pizza as opposed to baking-pan pizza, I never looked back. The crust gets deliciously chewy if it's thick and crispy if it's thin. I probably use my pizza stone 2-3 times a month for pizzas or calzones.
