Marinated Eggplant
got from another site
eggplant, chunked
1/4 cup vinegar
1/4 cup vodka
1/4 cup water
1/4 cup sugar
3 - 4 T fresh dill, cut up
juice of a lemon
half an onion, sliced
2 cloves garlic
pepper to taste
You assemble and let sit in fridge overnight. Good !

I know you posted this a long time ago, but I came across it when I was looking for an eggplant salad recipe. I have two qestions. Do you cook the eggplant? do you dice the garlic? Thank you so much!
